Cauliflower Rice and Beans
Ingredients
1 bag of riced cauliflower or head of raw cauliflower, riced
1 tsp olive oil
½ cup chopped onion
2 garlic cloves
1 tsp cumin
½ tsp salt
¼ tsp black pepper
juice of 1/2 a lime
1 can black beans, drained and rinsed
½ cup corn kernels
¼ cup cilantro, chopped

- If you are using 1 head of cauliflower you can chop the florets and rice them in a food processor.
- In a large pan, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and cook for another minute until fragrant.
- Add chopped cauliflower to the pot and cook for about 5 minutes, stirring ocasionally.
- Sprinkle cumin, salt, and black pepper over the mixture and stir well.
- Add the drained and rinsed black beans and continue to cook, stirring regularly, until everything is heated through.
- Stir in the corn kernels and cook for an additional 2-3 minutes.
- Remove from heat and mix in the lime juice and chopped cilantro.
