Cauliflower Rice and Beans

Coliflor picada con habichuelas. Riced cauliflower with beans.

 1 bag of riced cauliflower or head of raw cauliflower, riced
 1 tsp olive oil
 ½ cup chopped onion
 2 garlic cloves
 1 tsp cumin
 ½ tsp salt
 ¼ tsp black pepper
 juice of 1/2 a lime
 1 can black beans, drained and rinsed
 ½ cup corn kernels
 ¼ cup cilantro, chopped

If you are using 1 head of cauliflower you can chop the florets and rice them in a food processor.

In a large pan, heat olive oil over medium heat.

Add chopped onion and sauté until translucent.

Stir in minced garlic and cook for another minute until fragrant.

Add chopped cauliflower to the pot and cook for about 5 minutes, stirring ocasionally.

Sprinkle cumin, salt, and black pepper over the mixture and stir well.

Add the drained and rinsed black beans and continue to cook, stirring regularly, until everything is heated through.

Stir in the corn kernels and cook for an additional 2-3 minutes.

Remove from heat and mix in the lime juice and chopped cilantro. 

Serve and enjoy your meal!
