Healthy Oatmeal Raisin Cookies
Ingredients:
- 1/4 cup nut butter (peanut, almond, cashew, or pistachio)
- 1 ripe banana
- 1-2 tablespoons maple syrup
- 1 cup rolled oats
- 2 tablespoons shredded coconut
- 1 tablespoon chia seeds
- 1 tablespoon ground flax seeds
- 1/3 cup raisins
Instructions:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, mash the ripe banana thoroughly.
- Add your choice of nut butter and maple syrup to the mashed banana and mix well until combined.
- Stir in the shredded coconut, chia seeds, and ground flax seeds.
- Add the rolled oats and raisins to the mixture and stir until everything is well incorporated.
- Using a tablespoon, scoop the mixture and roll it into balls.
- Place the balls on the prepared baking sheet and flatten them slightly.
- Bake in the preheated oven for about 10 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
